Food & Imagination (Oxford Symposium 2021) was our second online symposium, and it was a chance to let our imaginations run riot. Janet Bezier writes in the Plenary, it was the year where, as Elisabeth Luard put it, we let the ‘spaceship’ of discussing food over the internet become a butterfly. We had a butterfly’s view of Peru with its saltfields, and then it settled on the edible flowers on the shortbreads cooked by Chef Cordula Peters. The butterfly then visited Kitchen Tables all over the world, from Junya Yamasaki’s food-truck, sizzling fish in London and Los Angeles, to Zimbabwe, Saint Lucia, Singapore and more.
