Our contributors celebrate the lives of two unsung twentieth-century heroes of the restaurant industry and social reform respectively. One, an Austrian who had a stellar career in the Viennese restaurant scene before fleeing the country as a Jewish refugee at the start of the Second World War. The other, the little remembered ‘Pudding Lady’ who campaigned tirelessly to improve the culinary skills of working-class women in the first half of the century. The challenges of the world of eighteenth century publishing are explored in the context of France’s best selling cookery book La Cuisinière bourgeoise. We’ll also be getting ‘soused’ (or at least discovering the origins of the word) and will have our taste buds whetted with a delectable array of heritage breads from the United Arab Emirates.
